Aunt Ollie’s veggie pizza rounds were on the menu when we visited this summer. My husband Curtis grew up on these yummy delights, but for the boys and I, this was our first time.
We visited Aunt Ollie Mae and Uncle Stanley in Tennessee this summer on our homeschool convention tour. We have been trying to make it to their house for years! My boys have visited without me in the last few years, but I was excited to get back to their beautiful place.
Aunt Ollie has a soft spot in Grayson’s heart. She was the first person to give him a lollipop at almost three years old in 2005. He remembers the exact place too, in the play fort in her backyard. It is wonderful to have such memories and as southerners, it usually revolves around food.
Aunt Ollie always has great casseroles and vegetarian dishes that we love. Most have memories from childhood for my husband, Curtis, and me as well. My grandmother fixed many of the same dishes.
This trip was all about the veggie pizza rounds. The veggie rounds were completely devoured by Grayson and Grant and they asked for the recipe so we could enjoy them at home. I couldn’t believe how simple they were and most of the ingredients can be kept on hand for a pizza emergency.
Eleven years later, Grayson is on the far left and new addition since the lollipop incident, Grant.
I have made them several times since our trip and we are thankful Aunt Ollie shared her recipe for us to enjoy. I hope you enjoy them too! The ingredients are easy to keep on hand or in the freezer and you can mix up the ingredients to whatever you like. Generally, if you give my boys bell peppers they are not too fond of them. However, the crunch effect in these yummy treats made them go down without a fuss.
