Wild Game Burgers
Having wild game in my freezer what never on my grocery list. I have always bought my meat pre-packaged at the grocery store. I grew up eating venison here and there, quail on occasion, and frog legs. None of which I ever thought would be on my table again as an adult.
My grandfather was a Florida cracker who hunted deer, turkey, and quail. He was also an avid fisherman and sold fish and seafood to local restaurants. My oldest son has inherited Papa’s love for outdoor sports and now keeps my freezer full of wild game.
Venison is on the menu tonight with burgers you won’t want to put down! Venison is a very lean meat in Florida. Deer here do not store fat; therefore, you will become full quicker to eat venison.
The ingredients I use are always on-hand for wild game burgers ; you can vary them to your taste.
1 pound of ground venison
1 packet of onion soup mix
1/4 cup mayonnaise
1 teaspoon Worcestershire sauce
1 teaspoon of salt
1 teaspoon of pepper
1 egg, optional
Mix all ingredients together. Form about 5 patties. Thinner patties work best as they puff up. I cook mine on high heat for 5 minutes on each side. Grilling is a good option and brings out the flavor.
